Once upon a yummy time, during one of my adventurous trips around the globe, I found myself craving something warm, hearty, and, importantly, vegan in the chilly embrace of the Scottish Highlands. π΄π¦οΈ Surrounded by captivating landscapes but with limited vegan options, I was inspired to create my own comforting dish. Thus, the Smoky Vegan Chili Sin Carne was born β a bowl filled with love, warmth, and a smoky embrace that felt like a hug from the inside. πΆοΈπ

Ingredients
- 2 tablespoons Olive oil
- 1 large Red onion, finely chopped
- 3 Garlic cloves, minced
- 1 Red bell pepper, diced
- 1 large Carrot, diced
- 2 Celery stalks, diced
- 1 can (28 oz) Canned tomatoes, crushed
- 1 can (15 oz) Kidney beans, rinsed and drained
- 1 can (15 oz) Black beans, rinsed and drained
- 1 cup Sweet corn, frozen or fresh
- 3 cups Vegetable broth
- 2 teaspoons Chili powder
- 1 teaspoon Cumin
- 1 teaspoon Smoked paprika
- Salt and Pepper, to taste
- 1 Avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Let's Get Cooking!
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, bell pepper, carrot, and celery, sautΓ©ing until soft and fragrant, about 8-10 minutes.
- Stir in the crushed tomatoes, kidney beans, black beans, sweet corn, vegetable broth, chili powder, cumin, and smoked paprika. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat and simmer uncovered for about 30 minutes, or until the chili thickens and the vegetables are tender.
- Taste and adjust the seasoning as necessary. Serve the chili topped with slices of avocado, fresh cilantro, and a squeeze of lime. π₯πΏ
