Once upon a yummy time, during one of my adventurous trips around the globe, I found myself craving something warm, hearty, and, importantly, vegan in the chilly embrace of the Scottish Highlands. 🏴🌦️ Surrounded by captivating landscapes but with limited vegan options, I was inspired to create my own comforting dish. Thus, the Smoky Vegan Chili Sin Carne was born – a bowl filled with love, warmth, and a smoky embrace that felt like a hug from the inside. πŸŒΆοΈπŸ’š

Ingredients

  • 2 tablespoons Olive oil
  • 1 large Red onion, finely chopped
  • 3 Garlic cloves, minced
  • 1 Red bell pepper, diced
  • 1 large Carrot, diced
  • 2 Celery stalks, diced
  • 1 can (28 oz) Canned tomatoes, crushed
  • 1 can (15 oz) Kidney beans, rinsed and drained
  • 1 can (15 oz) Black beans, rinsed and drained
  • 1 cup Sweet corn, frozen or fresh
  • 3 cups Vegetable broth
  • 2 teaspoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • Salt and Pepper, to taste
  • 1 Avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Let's Get Cooking!

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, bell pepper, carrot, and celery, sautΓ©ing until soft and fragrant, about 8-10 minutes.
  2. Stir in the crushed tomatoes, kidney beans, black beans, sweet corn, vegetable broth, chili powder, cumin, and smoked paprika. Season with salt and pepper to taste.
  3. Bring the mixture to a boil, then reduce the heat and simmer uncovered for about 30 minutes, or until the chili thickens and the vegetables are tender.
