Ingredients

  • Whole wheat lasagna noodles (9-12 noodles, depending on your pan size)
  • 2 cups of marinara sauce
  • 1 cup of cashews, soaked overnight
  • 1 tablespoon of nutritional yeast
  • 1 teaspoon of garlic powder
  • Juice of 1 lemon
  • 1 zucchini, thinly sliced
  • 1 cup of spinach
  • 1 cup of sliced mushrooms
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Start by making the cashew cheese: blend the soaked cashews, nutritional yeast, garlic powder, lemon juice, and a dash of salt and pepper until smooth. Set aside.
  3. In a pan, sauté the zucchini, spinach, and mushrooms with olive oil until they’re soft and fragrant. Season with salt and pepper.
  4. Assemble the lasagna: Start with a layer of marinara sauce at the bottom of your baking dish, followed by a layer of noodles.
